Unstuffed Bell Pepper Casserole
This easy to prepare dish will quickly become a family favorite, I promise!
(whatever you have on hand works!)
of varying colors
(white or purple)
(I use one small jar)
Salt and Pepper for taste
Mexican Cheese Mix
Preheat oven to 375′.
Coat a 13×9″ baking dish with cooking spray.
Cook the rice if you haven’t already. Set aside in its own bowl, while you prepare everything else.
Brown the meat. Be sure to add a little salt and pepper at the beginning. About halfway through, add a few teaspoons of water and about half the packet of taco seasoning.
Chop up the bell peppers into 1/2″ pieces and put into a large bowl. (The more colors of bell pepper, the better, but we always just use what we have on hand!)
Dice the Jalapeno and add to the bowl.
Dice the Onion and add to the bowl.
Add the meat and rice to the bowl. Sprinkle in the remaining taco seasoning and mix everything together.
Add the salsa in and mix again.
Scoop your mix into the baking dish and flatten with a spoon.
Cook for 20-25 minutes, until just golden brown on top.
Pull out, add the cheese to the top and put back in for five minutes to melt the cheese.
Being a hunter family, we’ve made this dish with a variety of meats and it always turns out great!
